Granola

Been making granola to eat with yogurt but did not write down the recipe so today I bake it and decided to keep it here for record. Adapted from various recipes and adding own combo of nuts and fruits. You can change honey to maple syrup if you have it. 

Ingredients 

  • 150g/2cups rolled oats (I used organic)
  • 50g/1/2 cup walnuts, break into chunks
  • 40g/1/4 cup macadamia nuts or hazel nuts or almonds
  • 1/2 tsp salt
  • 1/4 tsp cinnamon powder 
  • 50g/1/4 cup olive oil
  • 85g/1/4 cup + 1/2 tablespoon honey
  • 1/2 tsp vanilla extract 
  • 30g/1/4 cup cranberries
  • 20g/1/8 cup raisins

Method:

In a bowl, add all ingredients except the dried fruits. Mix well and transfer into a lined baking tray.

Bake in preheated oven at 175C for 20-22 mins or until golden. Halfway through baking, give the granola a stir and press down so they stick together if you prefer them in clusters. I switch off the oven and leave the granola inside for another 10 minutes to make sure they are crispy.

Remove from oven and pour in the dried fruits. Leave to cool completely before you stir so that the granola are in clusters and not too loose. Store in air tight container and enjoy with your yogurt or salad.
